I love 7 layer taco dip.

It has all of those fun Mexican layers like sour cream, salsa, and my favorite, homemade guacamole.

It’s the perfect party appetizer!

And no one would guess that this keto recipe uses eggplant instead of refried beans!

When I first stumbled across a Keto 7 layer dip that used cauliflower for the base layer, it was good, but not quite the same 7 layer dip that I grew up loving.

Once I learned how to make bean-less refried beans, I knew this was the base layer this dish needed, and I was right!

I have served this at multiple parties, and no one has ever noticed that the base was eggplant instead of actual beans!

Keto dipper options that I like are veggies such as sliced cucumber, sliced radishes, celery sticks, carrot sticks, and bell pepper strips.

For those who are doing gluten free and avoiding inflammatory oils but are not strict keto, Siete brand chips are a great option.

7 Layer Taco Dip Assembly Directions:

Let’s build this thing!

Start with a fun glass pan – my favorites are a pie plate or a shallow trifle bowl.

Make the bean-less refried beans and spread them out in the dish.

I always like to refrigerate the beans-less refried beans to cool them down a little before adding the other ingredients. This is also a great time to make the homemade salsa and family favorite guacamole if you aren’t using store bought.

Once the bean-less refried beans have cooled down (about 15 minutes in the fridge), grab them back out and smooth the sour cream over the top.

Next, layer on the guacamole. I like to do this before the salsa, so that the salsa can help smooth out the chunky avocado layer before you sprinkle on the remaining toppings.

Then, add that salsa. Smooth everything out.

Now the fun part! Sprinkle on the cheese.

For the finishing touch, add some green onion and olives!

Ta-Da!!!! This is just beautiful to sit out as an appetizer at a party.

Now if you are like me and have family members that don’t like olives, you can leave them off and serve them on the side or only put them on half of the dish. You could also switch the olives for shredded lettuce (I would just add the lettuce before the cheese layer).

Description

I love 7 layer taco dip – it’s the perfect party appetizer! Set this out at your next family potluck or Superbowl party!


Ingredients

Scale
  • 1 batch of bean-less refried beans
  • 3/4 cup sour cream
  • 1 cup salsa (store-bought or homemade) or diced tomatoes
  • 1 batch of homemade guacamole or 2 cups of store-bought guacamole
  • 4 ounces Colby jack cheese, shredded
  • ½ cup sliced olives
  • ¼ cup green onion, diced

Instructions

  1. Spread the bean-less refried beans over the bottom of a 9-inch pie plate.
  2. Layer on the sour cream, salsa, and guacamole, smoothing each layer on top of the next.
  3. Sprinkle on the cheese, sliced olives and chopped green onion.
  4. Serve immediately or store in the fridge until ready to serve.

Storage:

Store any leftovers in the fridge for up to 5 days.
