Instructions

  1. In a blender cup, puree the avocados together with the coconut milk.
  2. Pour mixture into a bowl and add the remaining ingredients. Use a whisk to combine well.
  3. Taste the pudding and adjust the vanilla, stevia, and salt to your liking. 
  4. Chill for an hour if you want cold pudding, or enjoy immediately if you don’t mind it being room temperature.
  5. Serve in small bowls topped with cocoa nibs, if using.

Alternatively:

  1. Add all ingredients to a larger blender and puree everything together.
  2. Adjust ingredients and blend again to reach your desired flavor.
  3. Chill for an hour to have cold pudding, or enjoy immediately if you don’t mind it being room temperature.
  4. Serve in small bowls topped with cocoa nibs, if using.

Storage: Keep leftover pudding in an airtight container in the fridge for up to 5 days.
