Description
Chocolate avocado protein pudding is an easy way to get healthy fats and protein into your family’s diet! Plus, you can enjoy this dessert guilt free!
Ingredients

- 2 ripe avocados
- 1 can of full-fat coconut milk
- 1/2 cup chocolate protein powder (see specific diet protein powder recommendations above)
- 1/4 cup cacao powder or cocoa powder (use carob powder for AIP)
- 1 teaspoon vanilla (use 1/4 teaspoon vanilla powder for AIP)
- Pinch of salt (or more to taste)
- Optional: liquid stevia, honey, or whatever sweetener your family uses – add to taste (see above for suggested amounts to start with)
- Optional: top with cocoa nibs
Instructions
- In a blender cup, puree the avocados together with the coconut milk.
- Pour mixture into a bowl and add the remaining ingredients. Use a whisk to combine well.
- Taste the pudding and adjust the vanilla, stevia, and salt to your liking.
- Chill for an hour if you want cold pudding, or enjoy immediately if you don’t mind it being room temperature.
- Serve in small bowls topped with cocoa nibs, if using.
Alternatively:
- Add all ingredients to a larger blender and puree everything together.
- Adjust ingredients and blend again to reach your desired flavor.
- Chill for an hour to have cold pudding, or enjoy immediately if you don’t mind it being room temperature.

Storage: Keep leftover pudding in an airtight container in the fridge for up to 5 days.
